Kiev cake
A Kiev cake or Kyiv cake (Ukrainian: торт "Київський") is a brand of dessert cake, made in Kiev, Ukraine since December 6, 1956[1] by the Karl Marx Confectionery Factory (now subsidiary of the Roshen corporation) . It soon became popular all over USSR. The cake has become one of the symbols of Kiev city, particularly by its brand name and package (depicting the informal coat of arms of Kiev). The cake has two airy layers of meringue with hazelnuts, chocolate glaze, and a buttercream-like filling. A hazelnut is the nut of the hazel and is also known as cobnut or filbert nut according to species. A cob is roughly spherical to oval, about 15–25 mm long and 10–15 mm in diameter, with an outer fibrous husk surrounding a smooth shell. A filbert is more elongated, being about twice as long as it is round. The nut falls out of the husk when ripe, about seven to eight months after pollination. The kernel of the seed is edible and used raw or roasted, or ground into a paste. Hazelnuts are also used for livestock feed, as are chestnuts and acorns. The seed has a thin, dark brown skin, which is sometimes removed before cooking. Brand is the "name, term, design, symbol, or any other feature that identifies one seller's good or service as distinct from those of other sellers."[1] Initially, Branding was adopted to differentiate one person's cattle from another's by means of a distinctive symbol burned into the animal's skin with a hot iron stamp, and was subsequently used in business, marketing and advertising. Hazelnuts are produced in commercial quantities in Turkey, Italy, Greece, Georgia, in south of the Spanish region of Catalonia, in the UK county of Kent and in the American states of Oregon and Washington. Turkey is the largest producer of hazelnuts in the world with approximately 75% of worldwide production.[1] Hazelnuts are used in confectionery to make praline, and also used in combination with chocolate for chocolate truffles and products such as Nutella and Frangelico liqueur. Hazelnut oil, pressed from hazelnuts, is strongly flavoured and used as a cooking oil. Hazelnuts are rich in protein and unsaturated fat. Moreover, they contain significant amounts of thiamine and vitamin B6, as well as smaller amounts of other B vitamins.Buttercream (also known as butter cream, butter icing, and mock cream) is a type of icing or filling used inside cakes, as a coating, and as decoration. In its simplest form, it is made by creaming butter with powdered sugar, although other fats can be used, such as margarine or lard. Colorings and flavorings are often added, such as chocolate, fruit purees, and various extracts. Buttercream is a common and popular topping for cupcakes, sponge cakes, butter cakes, and other desserts. Whether buttercream with no butter or a butter equivalent can rightly be called buttercream is debated among bakers, pastry chefs, and cake decorators.
